How to Grow Khapli Wheatgrass at Home

  1. 01

    Soak 8–12 Hours

    Cover the grain with clean water overnight. Khapli is larger and harder than common wheat, and a short soak is the most common cause of patchy germination.

  2. 02

    Sow Densely on Damp Cocopeat

    Drain thoroughly, then spread the grain in one even layer, grain touching grain. Roughly 100–200g fills a 25cm × 25cm tray. You want a mat, not spaced plants.

  3. 03

    Blackout 2–3 Days

    Cover with an inverted tray. Longer than three days gives pale, weak blades that flop the moment you uncover them.

  4. 04

    Light and Bottom Water

    Move to bright indirect light at 3–4 cm. Water into the outer tray and let the medium wick it up — wetting the canopy in Indian humidity starts mould at the grain line.

    Harvest at 7–10 Days

    Cut just above the grain when blades are 15–20 cm. Cut once and re-sow; emmer regrowth is thin and bitter compared with the first cut.

How to judge Khapli wheat quality before you buy

Khapli supply in India is small, seasonal and inconsistent in a way commodity wheat is not. Two sellers can both be selling genuine emmer and deliver noticeably different grain. These are the things worth checking, whoever you buy from.

Is it actually dehusked? Emmer is a hulled wheat — the grain sits inside a tough glume that does not thresh free the way modern wheat does. Grain sold with spikelets still attached will germinate unevenly and cannot be milled without extra work. Everything we sell is dehusked and ready to use.

Is there a germination figure, and is it recent? A seller who cannot tell you the germination rate of the lot in front of them is passing on someone else's paperwork. We test every incoming batch on damp tissue before it is packed, which is how we can state 90%+ rather than repeat a supplier's claim. Is it treated? Seed sold for field planting is frequently dressed with fungicide and dyed a vivid pink, red or blue so it cannot be mistaken for food. That seed will grow, but you must not sprout it, juice it or mill it. Ours is untreated and undyed, which is the whole point of buying food-grade grain — one pack covers growing, sprouting and flour.

How old is the lot? Whole Khapli grain stays viable for two to three years stored properly, but germination drifts down the whole time. Ask when it was harvested. If nobody knows, that is an answer in itself.

Does the price make sense? Khapli yields far less per acre than dwarf wheat and needs dehusking. Grain priced like ordinary atta is worth a second question — either it is not emmer, or something in the chain is not what it appears.

Choose common wheatgrass if you juice daily and cost per shot is what matters. At ₹50 per 100g it is less than half the price of Khapli and the tray is ready in a similar window. The juice is sharper and more grassy.

Choose Khapli if you have tried wheatgrass and disliked the taste, or if you want one grain that does three jobs. Khapli grass is thicker-bladed and distinctly sweeter, and the same pack mills into flour once you have had enough juice — something common wheatgrass seed, usually sold treated, cannot do.

Khapli moves through three kinds of business in India, and each wants something slightly different from a supplier.

Organic and health food shops buying whole grain for resale. Here what matters is consistency between lots and a germination figure you can put on a shelf label. We quote by quantity and hold stock aside for repeat orders so the second delivery matches the first.

Small mills and home-milling customers buying to grind. Khapli flour is a genuinely premium product in Pune and Mumbai and sells at a multiple of ordinary atta. Whole grain is what you want — buy it whole, mill in small batches, and the shelf life problem solves itself. Khapli flour turns rancid far faster than refined atta because more of the germ oil survives.

Juice bars, gyms and wellness centres growing their own wheatgrass. Khapli grass is a differentiator on a menu that lists wheatgrass shots alongside every other juice bar in the city, and the sweeter taste means fewer customers order it once and never again. Reckon on 150–200g of seed per tray and a tray per two to three days of steady service.

How much Khapli wheat should you order?

The commonest question we get is which pack to buy, and the honest answer depends entirely on what you plan to do with the grain. Khapli gets used three different ways and each consumes it at a very different rate.

If you are trying it for the first time: 100g at ₹120. That is one wheatgrass tray, or several rounds of sprouts, or enough to taste the flour in a single batch of bhakri if you mill it. It exists so you can find out whether you like Khapli before committing. Most people who go on to buy the 1kg pack started here, and a fair number decide the sweeter grass is not worth the premium over ordinary wheatgrass — which is a perfectly reasonable conclusion to reach for ₹120.

If you juice a few times a week: 500g at ₹240. Three to four trays, which at one tray every three to four days is roughly a fortnight of steady juicing. This is the size most repeat household customers settle on, because it is enough to keep a rotation going without holding grain long enough to worry about storage.

If you have decided you want Khapli: 1kg at ₹350. Six to eight trays, or a proper first milling batch, and at ₹35 per 100g it is a third of the small-pack rate. Whole grain keeps for two to three years stored airtight, so a kilogram is not a commitment you can regret in the way a perishable one would be.

If you are sprouting rather than growing: a jar takes 50 to 75g and produces enough sprouts for two or three people over a couple of meals. A 500g pack is around seven to ten jars. Sprouting is the cheapest way to eat Khapli regularly, and the fastest — 2 to 3 days against 7 to 10 for grass.

If you are milling: think in kilograms rather than grams. A kilogram of whole grain yields roughly a kilogram of flour, which is a few weeks of rotis for a small household. Mill in small batches and store the grain rather than the flour, for the reasons in the storage section above. Households milling regularly usually move to wholesale quantities, and at that point a quote beats the retail pack every time.

A practical note on shipping. Free delivery starts at ₹499, so a single 100g pack at ₹120 will carry a shipping charge while a 500g or 1kg pack, or a small pack combined with anything else from the seed catalogue, clears it. If you are ordering the trial pack, it is usually worth adding a second variety rather than paying to ship one small bag.

Storage when it arrives. Keep the grain whole and airtight in the coolest, darkest part of your kitchen. A steel dabba is better than the bag it came in. During the Pune monsoon, drop a silica gel sachet into the container — in July and August the humidity does the damage rather than the heat.
