What do mustard microgreens taste like?
Sharply peppery, closer to wasabi or horseradish than to a leafy green. They are the strongest-flavoured microgreen we grow, which makes them excellent against rich or fatty dishes and too much for a plain salad on their own.
Are mustard microgreens the same as sarson?
Yes, this is the same mustard grown for sarson ka saag, harvested at the seedling stage. The flavour is sharper and cleaner than the mature leaf, and it needs no cooking to become palatable.
How do I use mustard microgreens in Indian cooking?
Scatter them over dal, rajma, chole or a paratha at the table. They cut through ghee and cream the way a raw onion or green chutney does. They also work on sandwiches and with grilled fish or paneer.
Should mustard microgreens be cooked?
No. The compounds responsible for the peppery heat break down with heat, so cooking leaves you with a limp green and none of the character. Add them off the flame or at the table.
How long do mustard microgreens stay fresh?
Six to eight days refrigerated in a ventilated container, stored dry and unwashed with a sheet of kitchen paper to absorb condensation. Rinse only just before use.
